Pesto Pasta

Summer Pesto
 It was like the middle of summer yesterday. As I've been living in London for a couple of years, I start not to take it for granted to see the Sun and to appreciate for the warmth and light from the Sun whenever I can enjoy it, you know it's very rare to see this nice weather in London.

 Anyway, I went to my italian class in the morning, (Si io studio l'italiano!) and learnt this sentence - Il pesto e salsa per cucinare, e salsa al basilico! - which means 'Pesto is basil sauce..'

 With these facts, I though turning on the oven shouldn't be my appreciation for this weather, and came across this idea to make my own cold summer pesto pasta for dinner. As a result, we had the most superb meal, facing the breeze! :)


You will need :

(for 4 dishes)

(for pesto)
extra virgin olive oil 100ml
fresh basil 25-30 leaves
pine nuts 40g
grated parmesan cheese 25g
grated pecorino cheese 25g
salt a pinch

small tomatoes 25-30 ea
fresh beans 2 cups
pasta 500g (I used Rigatoni for this, but Fusilli would be good, too.)

   (1) Blitz all ingredients for pesto in the food processor until smooth sauce.
   (2) Blanch french beans and tomatoes, then cook a bit on the pan, oiled.
   (3) Cook pasta, and cool down.
   (4) Mix all together, and BUON APETITO!
